Arthritis involves persistent inflammation inside the joint. Immune chemicals gradually irritate cartilage and surrounding tissue, producing stiffness, swelling and pain.

How high-polyphenol olive oil may help
Extra virgin olive oil contains natural phenolic compounds including oleocanthal and hydroxytyrosol. These molecules act as antioxidants (reducing cellular damage from free radicals) and influence inflammatory pathways.

Oleocanthal is particularly interesting because it works on some of the same enzyme systems targeted by common anti-inflammatory medicines. It does not replace medication, but regular intake may contribute to lowering the background level of inflammation that drives ongoing joint irritation.

Polyphenols may also help protect cartilage cells from oxidative damage, a factor thought to accelerate degeneration in osteoarthritis.
